This can be done but would require ongoing maintenance since Adapt natively doesn't support multiple users.  I have successfully setup a linux/unix server with Adapt authoring tool running nightly backups.  Also using MongoChef you can easily add new users to Adapt to use with multiple users, I could either support this for you or teach someone within your organization to handle this.  oarango30@gmail.com if you want to discuss further.
