I would first read three sections of the Wiki page on accessibility in Adapt.

Make sure you thoroughly understand all the non-technical requirements of WCAG Level AA so that you can implement those too.

I would also not enable accessibility for touch devices unless you know for sure it is a requirement. It is disabled by default, mainly because it can be a lot more challenging to get working.
