I am quite new to all this and just taking baby step. Anyone know of the best way to start? Been through the demo but would like to dabble around with a mock-up

I would suggest attempting to install a local version of the Adapt Authoring Tool and having a play around.
Warnng! It is not the simplest installation but if you persevere you should get there in the end. There are quite a few posts on this forum with advice.
