With regards to downloading the source, my thoughts are as follows:

• With regards to the modules owned by Adapt Learning (i.e. the demos) - no problem at all.
• Some resources don't belong to the Adapt Learning project so we're not really in a position to make this decision. For the avoidance of doubt, I recommend to contact the owner of the content module or the organisation, which has developed the course. Their response will likely depend on what you want to do with the downloaded examples.
