I am very interested in using the Adapt tool as it has been used by Kineo Pacific to develop an award winning course for my agency. However, looking through all of the information on Adapt, it seems to me that I would need significant coding training to utilise it.
How much coding training do I need?

I guess, this will depend on your requirements. Since there is the Adapt Authoring Tool you can set up a course without any coding skills at all. The installation of the authoring tool is somewhat technical, though.
If you have some special requirements, it might be necessary to build custom extensions for the framework. This won't work without the appropriate knowledge.
Maybe you would like to modify the design - then you will need coding skills as well. Particularly CSS skills would do the trick in this case.
